Chocolate Cheesecake Granola Bars

Vegan Chocolate Cheesecake Granola Bars

Makes: 12-15 bars

Ingredients

Crust:

Vegan Cheesecake Filling:

  • ½ cup rolled oats
  • 1 ripe banana
  • ½ cup almond butter
  • ½ cup cashew milk
  • 2-3 tsp. maple syrup

Topping:

  • Coco Cacao gr8nola
  • Melted dark chocolate
  • Other toppings as desired (we suggest cacao nibs, coconut flakes or melted almond butter)

Directions

Crust:

  1. Line a 10x10 baking dish with parchment paper. Set aside.
  2. Add granola, oats and maple syrup to blender. Set aside.
  3. In a small bowl, combine dark chocolate and coconut oil, and melt until smooth (if melting in microwave, heat in 15 second intervals, stirring between every interval).
  4. Add melted chocolate to blender, and blend all ingredients until combined.
  5. Spread the mixture evenly in the lined baking dish, and freeze while you prepare the filling!

Vegan Cheesecake Filling:

  1. In a blender or food processor, blend oats to a fine flour.
  2. Add banana, almond butter, cashew milk and maple syrup. Blend until fully combined and smooth.
  3. Pour mixture over crust, and spread evenly.
  4. Freeze 3 hours or overnight.

Topping:

  1. Once bars have frozen, remove from freezer and top with melted chocolate and Coco Cacao gr8nola.
  2. Top with other toppings, as desired.
  3. Enjoy!
