These insanely delicious vegan cheesecake granola bars are soy, dairy, wheat and refined sugar-free and made with eight simple ingredients you probably already have in your kitchen. Keep these bars in the freezer for wholesome on-the-go snacking and you’ve got yourself the perfect clean treat to enjoy 24/7!
Vegan Chocolate Cheesecake Granola Bars
Makes: 12-15 bars
Ingredients
Crust:
- ½ cup Coco Cacao gr8nola
- ½ cup rolled oats
- 3-4 tsp. maple syrup
- ½ cup vegan dark chocolate (we love Enjoy Life or Trader Joe’s)
- ½ tsp. coconut oil
Vegan Cheesecake Filling:
- ½ cup rolled oats
- 1 ripe banana
- ½ cup almond butter
- ½ cup cashew milk
- 2-3 tsp. maple syrup
Topping:
- Coco Cacao gr8nola
- Melted dark chocolate
- Other toppings as desired (we suggest cacao nibs, coconut flakes or melted almond butter)
Directions
Crust:
- Line a 10x10 baking dish with parchment paper. Set aside.
- Add granola, oats and maple syrup to blender. Set aside.
- In a small bowl, combine dark chocolate and coconut oil, and melt until smooth (if melting in microwave, heat in 15 second intervals, stirring between every interval).
- Add melted chocolate to blender, and blend all ingredients until combined.
- Spread the mixture evenly in the lined baking dish, and freeze while you prepare the filling!
Vegan Cheesecake Filling:
- In a blender or food processor, blend oats to a fine flour.
- Add banana, almond butter, cashew milk and maple syrup. Blend until fully combined and smooth.
- Pour mixture over crust, and spread evenly.
- Freeze 3 hours or overnight.
Topping:
- Once bars have frozen, remove from freezer and top with melted chocolate and Coco Cacao gr8nola.
- Top with other toppings, as desired.
- Enjoy!
