Thick, chewy and packed with plenty of chocolate-y, coconut flavor in each bite. These Vegan Coconut Magic Cookie Bars are made with layers of clean ingredients including a Cacao Crisp gr8nola crust made with superfood coconut oil, creamy condensed coconut milk, shredded coconut and antioxidant dairy-free dark chocolate.

Vegan Coconut Magic Cookie Bars
Ingredients
Crust:
- 2 cups Cacao Crisp gr8nola
- 3 Tbsp. coconut oil
- 3 Tbsp. maple syrup
Topping:
- 14 oz condensed coconut milk
- 1½ cups vegan dark chocolate chips
- 1 cup shredded coconut
- Optional: ½ cup Cacao Crisp gr8nola and ¼ cup vegan dark chocolate chips to top with
Directions
- Preheat the oven to 350F.
- Line an 8x8 pan with parchment paper. Set aside.
- In a blender or food processor, blend Cacao Crisp gr8nola to a fine flour.
- Add all crust ingredients, and mix until fully combined.
- Pour the crust mixture into the prepared pan, and press firmly and evenly.
- Pour the condensed coconut milk on top of the crust layer.
- Sprinkle evenly with chocolate chips.
- Sprinkle evenly with shredded coconut
- Optional: top with more Cacao Crisp gr8nola and dark chocolate chips.
- Bake for 20-25 minutes.
- Cool completely in the fridge, then slice and enjoy!
