Turmeric is taking over and we’re all about it. This superfood spice boasts a wide variety of health benefits, from purifying your skin to boosting immunity and detoxifying your system. Despite being widely used in cooking, we love baking with turmeric, especially our own Golden Turmeric gr8nola, which is the secret ingredient to this recipe.
We created these refined sugar-free, soy-free and dairy-free No-Bake Vegan Dark Chocolate Turmeric Cookies to satisfy those sweet and savory cravings while giving you anti-inflammatory benefits. We also added cinnamon and ginger to this recipe, which are also known to boost brain health!
The best thing about these one-bite cookies? You can eat more than one. ;)
No-Bake Vegan Dark Chocolate Turmeric Cookies
Makes: 12 cookies
Ingredients
No-Bake Vegan Turmeric Cookies:
- 2/3 cup Golden Turmeric gr8nola
- 1/2 cup old fashioned oats (blended to a flour, or whole if you would like an "oatmeal" cookie!)
- 1½ cups coconut flakes
- 2 Tbsp. coconut oil
- 4 Tbsp. maple syrup (or honey, if desired)
- 2 Tbsp. coconut sugar
- 1 tsp. pure vanilla extract
- 1 tsp. turmeric powder
- 1 tsp. cinnamon
- ¼ tsp. ginger
- ¼ tsp. allspice (optional)
Dark Chocolate Drizzle:
- ½ cup. vegan dark chocolate
- 1 tsp. coconut oil
- More Golden Turmeric gr8nola (to top with, if desired)
Directions
No-Bake Vegan Turmeric Cookies:
- Line a small baking sheet with parchment paper. Set aside.
- Blend Golden Turmeric gr8nola and oats to a fine flour and pour into a large bowl.
- Add the coconut and coconut sugar and stir until mixed thoroughly.
- Add turmeric powder, cinnamon and ginger, and mix until evenly combined.
- Add coconut oil, maple syrup and vanilla extract, and mix until fully combined. Add more maple syrup or coconut oil accordingly to your preferred taste and texture.
- Scoop the cookie dough by the tablespoon, and roll into cookie dough-like balls. Place the cookies side by side on the prepared baking sheet.
Dark Chocolate Drizzle:
- In a microwave-safe bowl or a double boiler, melt the chocolate and coconut oil together. If using a microwave, make sure to mix the chocolate in 15-20 second intervals.
- Once melted, drizzle the chocolate over the prepared cookies. Use as much or as little as you’d like -- feel free to whip up extra chocolate!
- Sprinkle immediately with Golden Turmeric gr8nola, if desired. Other yummy topping ideas are raw cacao nibs or coconut flakes.
- Allow 2 hours to set, or place in the fridge or freezer to expedite the setting process. The cookies will need to be thawed if so!
