These vegan parfaits are the perfect sweet treat with the added health benefits of superfoods. This is one winning combo that is super creamy with the perfect gr8nola crunch!
Matcha Parfait Ingredients
- 1 packet of Yourlixir Matcha Powder (1.5g/1tsp)
- 1 cup unsweetened coconut milk
- 1 Tbsp. chia seeds
- 1 tsp. maple syrup (add more to taste)
- 1 tsp. vanilla extract
- Dash of cinnamon
Turmeric Parfait Ingredients
- 1 packet Yourlixir Turmeric Powder (1.5g/1tsp)
- 1 cup unsweetened coconut milk
- ¼ tsp. ginger powder
- 1 Tbsp. chia seeds
- 2 tsp. maple syrup (add more to taste)
- ¼ tsp. vanilla extract
- Pinch of black pepper
- ¼ tsp. cinnamon
Vegan Whip Cream Ingredients
- 1 can of Trader Joe’s coconut cream (refrigerated)
- 2 Tbsp. maple syrup
Toppings:
- Golden Turmeric gr8nola
- Matcha Green Tea gr8nola
- Pomegranate seeds
- Blood orange
Directions
- Add powders and liquids together for each parfait, and stir well. Once the ingredients are mixed, add the chia seeds, stir again and let it sit in the fridge for at least 2-3 hours (or preferably overnight).
- To make the vegan whip cream, make sure the full fat coconut cream has been refrigerated. DO NOT SHAKE OR STIR CAN! Puncture a hole in the bottom of the can and let any of the “water” drain out before opening so you are left with thickest part of the cream. Add the maple syrup and coconut cream to a bowl and whip vigorously until it creates a fluffy, whip cream texture. (Add more maple syrup if you prefer it sweeter). Top the chia seed parfaits with the coconut whip cream, granola and fruits of your choice.
